Situated in Mediterranean Europe, Italy has land frontiers with France in the north-west, Switzerland and Austria in the north and Slovenia in the north-east. There is a great deal of variety in the landscape in Italy, although it is characterized predominantly by two mountain chains: the Alps and the Apennines. The former extends over 600 miles from east to west. It consists of great massifs in the western sector, with peaks rising to over 14,000 feet, including Monte Bianco (Mont Blanc), Monte Rosa and Cervino (the Matterhorn). San Marco dei Cavoti è uno dei centri più rinomati della Valfortore per la presenza di piccole e svariate attività industriali, fra le quali assume rilievo quella della produzione del torrone, conosciuto in tutta Italia. La prima fabbrica artigianale nacque nel lontano 1891 ed i successivi laboratori artigianali, sorti negli anni hanno prodotto vari tipi di torrone: dai rinomati croccantini, ai gustosi torroni al cioccolato, al gianduia, al caffè, al limone, all’arancio, ecc. Di origine medioevale, è ricordato per la prima volta nel 1385, anche se poco distante dal centro abitato, in località Zenna, sorgeva l’antica città sannita Cenna.
Di certo è che San Marco fu fondato da una colonia di Provenzali, venuti al servizio degli Angioini. Il termine Cavoti deriva dal francese Gavots ed indica gli abitanti di Gap, città della Provenza, dalla quale sembra che provenisse la colonia più numerosa.
